Corn Fritters
This
recipe is from my first Home Economics class (9th grade) and my brother Brad would eat them as fast as I could fry them up!
1 C.
Flour
1
tsp. Baking Powder
1/4
tsp. each Salt & Pepper
1
Egg, beaten
1/2
C. Milk
1 +
1/2 tsp. Shortening, melted & cooled
1 +
1/2 C. Corn, drained
Oil
for frying
Powdered
Sugar
Sift
flour, baking powder, salt and pepper.
Combine egg, milk and shortening.
Stir in dry ingredients – mixing only until smooth. Add corn.
Dip Tbl. into hot oil (365°) and then drop spoonful of batter in oil;
repeating until you have a full layer of fritters. Turn to brown both sides. Drain on paper towels and sift powdered sugar
on top.
