Zucchini ‘Crab’
Cakes
Tastes like crab cakes but without the crab - a really great way to
utilize that bumper crop of zucchini!

1/2 C. Grated Zucchini
1
Egg, beaten
2
Tbl. Butter, melted
1 C.
Ritz Cracker Crumbs
1/4 C. Minced Onion
2
tsp. Old Bay Seasoning
1/4 C. Flour
1/2
C. Vegetable Oil for Frying
Squeeze zucchini to remove excess moisture. In a large bowl, combine zucchini, egg and
butter. Stir in crumbs, onion and
seasoning; mix well. Shape into patties.
Dredge in
flour. In medium skillet, heat oil over
medium high heat until hot. Fry patties
in oil until golden brown on both sides.
